Salmon cooked on a rock with radish sauce vierge

Preparation time: 15 minutes

Cooking time: 15 minutes

Ingredients for 4 servings

  • 4 salmon filets, about 140 g each
  • 3 radishes, slivered
  • About twenty coriander leaves  
  • Juice of one lime
  • 60 ml (4 Tbsp) olive oil
  • Salt and pepper to taste

Method

For the rock:
  • Find a flat rock somewhere near your campfire
  • Build a fire with several logs and allow it to burn down to hot coals
  • Place the rock in the centre of the coals  
For the sauce:
  • While the rock is heating, combine the radish, coriander, lime juice and olive oil in a bowl  
  • Salt and pepper to taste and keep cool
For the salmon:
  • Flip the rock over so that the side that was in the fire becomes the cooking surface
  • Lightly oil the flesh side of each salmon filet and sprinkle with salt
  • Place them on the rock, flesh side down, and let cook for 10 minutes
  • Flip the salmon and continue to cook, skin side down, for another 5 minutes  
  • Top with the sauce vierge and serve with vegetables cooked in a packet
