Jerk chicken and vegetable skewers

Jerk chicken and vegetable skewers

Preparation time: 20 minutes

Cooking time: 12 minutes

Ingredients for 8 skewers:

  • 8 skewers (if they are wooden, soak them in water for at least 2 hours so they won’t catch fire)
  • 2 boneless chicken breasts (about 200 g each) cut in 1.5 cm cubes
  • 1 red or green pepper cut in 1.5 cm cubes
  • 1 white or red onion cut in 1.5 cm cubes  
  • 2 zucchinis cut in rounds about 1 cm thick
  • 5 ml (1 tsp) ground chili powder
  • 5 ml (1 tsp) ground allspice
  • 2.5 ml (½ tsp) cumin
  • 10 ml (2 tsp) grated fresh ginger (use ground ginger if you don’t have fresh)
  • Salt and pepper to taste


  • In a bowl, combine the spices with the cubed chicken  
  • Cover and let marinate for at least 2 hours  
  • Alternately thread each skewer with chunks of zucchini, pepper, onion and chicken, repeat until all the ingredients are used up
  • Grill the skewers over hot coals for about 3 minutes per side  
  • Serve as an appetizer or with a salad as a main course
N.B. You can also add mushrooms and/or cherry tomatoes to your skewers
