Cooking before you go

Cooking and eating outdoors are lots of fun, but you may not want to have to cook everything while you’re on vacation.

So why not prepare a few dishes ahead of time, to simplify things? Some lunches, snacks, desserts and mixtures for meals can be readied in advance to gain time and space. You can also plan a few frozen meals for the first few days. That way you won’t have to run to the grocery store to get extra ingredients.

Mixtures to prepare ahead of time

You can prepare some mixtures ahead of time, to use as is or as the basis for meals. The trick is to plan your menus and then cook what you need. You can put mixtures in sealed bags and write the name of the dish on them, along with the ingredients and quantities needed to complete them.

Here are a few suggestions:

  • Trail mix (nuts, dried fruit, seeds)
  • Pancake mix (flour, baking powder, with the right quantities). Write the other ingredients and amounts to add (milk, eggs) on the bag.
  • Porridge mix (oat flakes, brown sugar, powdered milk, cinnamon, raisins). Add hot water at the campground.
  • Couscous (mix the couscous, seasoning, powdered chicken bouillon). Add hot water at the campground.
Snacks to prepare ahead of time 

You can also prepare snacks and meals to take along on outings. Make sure you pack them properly in plastic containers or sealed bags, and keep them cold or in the shade so that they last longer.

Here are some ideas:

  • Home-made snack bars
  • Home-made granola
  • Scones
  • Muffins
  • Energy bites
  • Cookies with dried fruits and nuts
  • Mixed cut vegetables for salads and crudités
  • Quinoa croquettes
  • Banana bread
Salads you can freeze! 

Did you know that you can freeze small salads with olive oil and lemon juice, in meal-size containers? Here are a few examples:

  • Orzo and cubes of red, yellow and green peppers
  • Tabouleh with parsley, mint and Italian tomatoes
  • Chick peas, feta cheese, Kalamata olives and shallots
