Corn, carrots and zucchini cooked in a packet over coals

“Because garden-fresh vegetables taste even better than candy! Here’s my recipe for corn, carrots and zucchini cooked in a packet that I made at Camping Chutes-aux-Iroquois when I was there with Camping Québec last summer. #bobencamping” - Bob le Chef

Ingredients

Preparation time: 15 minutes

Cooking time: 20 minutes

 

Ingredients for 4 servings

  • 2 cobs of corn, cut into disks about 1 cm thick
  • 2 zucchinis cut into disks about 1 cm thick
  • 6 to 8 small carrots, left whole
  • ½ white onion, diced
  • 2 cloves garlic, minced
  • 30 ml (2 Tbsp) olive or vegetable oil
  • 15 ml (1 Tbsp) chili powder
  •  Salt and pepper to taste

Method

  • Build a fire with several logs and allow it to burn down to hot coals
  • Meanwhile, stir all the ingredients in a bowl until they are well coated with the oil  
  • Place them in the centre of a long piece of aluminum foil  
  • Fold up the aluminum foil into a tightly sealed half-moon shaped packet
  • Place the packet in the centre of the coals and let cook about 20 minutes (turning it over every 5 minutes)
  • Open carefully (it will be very hot) and serve as a side or main dish
