Bob le Chef’s Brussels sprouts

Ingredients

Preparation time: 10 minutes

Cooking time: 6 to 8 minutes

 

Ingredients for 4 servings:

  • About 20 Brussels sprouts
  • About 250 ml (1 cup) pancetta or lardons, cubed
  • 45 ml (3 Tbsp) olive or vegetable oil
  • Salt and pepper to taste

Method

  • Heat one side of the barbecue on high and leave the other side turned off (if you have a charcoal briquette barbecue, place briquettes on one side only
  • Tear off a sheet of aluminum foil long enough to go around the Brussels sprouts
  • Trim the stem ends and cut the sprouts in half  
  • In a bowl, stir together the sprouts, pancetta (or lardons) and oil
  • Place them on the aluminum foil and fold it up around them, leaving enough space for steam to form (try to shape your packet into a half moon) 
  • Place the packet on the hot grill, close the lid and cook for 5 minutes
  • Transfer to the unheated side of the grill, close the lid and cook for another 3 minutes  
  • Remove from the heat, unwrap and serve
Notes:

Be careful when adding salt, because pancetta is already quite salty.
